Peel, core and chop the apples.
Add the apples to a heavy bottomed sauce pan along with 1/4 cup of sugar, 1/4 cup of water and the cinnamon.
Cook over medium heat partially covered.
Stir every few minutes. It will take about 20 minutes to cook depending on whether you want it chunky or smooth. I like it chunky.
Add water and sugar if needed during cooking.
Eat warm or cold.
