- 2 tablespoons olive oil
- 1 pound extra jumbo shrimp peeled and deveined (24 pieces)
- 1 tablespoon Cajun or Creole spice blend
- 1 medium yellow squash sliced into 1/4-inch thick half moons (8 ounces)
- 6 ounces Andouille sausage or kielbasa fully cooked and sliced
- 1 large red bell pepper seeded and cut into thin 1-inch pieces
- 1 medium zucchini sliced into 1/4-inch thick half moons (8 ounces)
- 1/4 teaspoon kosher salt
Start by tossing the shrimp in a large bowl with the Cajun seasoning until well-coated.
Next, add the sausage, yellow squash, zucchini, bell pepper, and salt to the shrimp mixture, and drizzle everything with olive oil. Toss again until everything is evenly coated.
Preheat your air fryer to 400°F.
Depending on the size of your air fryer basket, you may need to cook in two batches. Transfer the shrimp and veggies into the basket, ensuring they are spread out evenly. Cook for 8 minutes, shaking the basket 2 to 3 times during cooking.
Once the first batch is done, set it aside and repeat the process with the remaining shrimp and vegetables.
Finally, return the first batch to the air fryer for an additional minute of cooking. Enjoy!
