Baked Cheddar Cauliflower Bites

Ingredients
  

  • 2 cups of cauliflower florets fresh or frozen
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 1/4 teaspoon garlic powder optional
  • 1/4 teaspoon dried oregano optional
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F and lightly grease a 24-cup mini muffin tin or a 12-cup standard muffin tin with oil. Set aside.
  • In a microwave-safe bowl, place the cauliflower florets and cover the bowl with plastic wrap. Microwave for about 7-8 minutes until the cauliflower is tender. Alternatively, you can blanch the cauliflower on the stovetop for 5 minutes in boiling water. After cooking, drain the cauliflower thoroughly.
  • Transfer the cooked cauliflower to a food processor and pulse briefly until it resembles rice-like grains. Take the processed cauliflower and place it in a clean kitchen towel, then squeeze out as much water as possible.
  • In a large mixing bowl, combine the drained cauliflower, cheddar cheese, egg, herbs, salt, and pepper. Stir everything together until the mixture is well-combined.
  • Using a spoon or small cookie scoop, portion out the mixture and press it into the prepared muffin tins, filling each one.
  • Bake the cauliflower bites in the preheated oven for 12-15 minutes, or until the edges turn golden brown and the centers are firm. Once done, remove the muffin tin from the oven and let the bites cool slightly before carefully taking them out. Serve with your favorite dipping sauce for a tasty treat!
