Ingredients
  

  • 2 boneless, skinless chicken breasts cut in half horizontally
  • 1 teaspoon cracked black pepper
  • 1/4 teaspoon salt flakes
  • 1 teaspoon sweet paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 cup grated Parmesan cheese
  • Salt and cracked black pepper to taste
  • Mashed potatoes, steamed rice, or pasta
  • Steamed greens
  • 1 tablespoon finely chopped parsley
  • Lemon wedges

Instructions
 

  • Season chicken breasts with pepper, salt, paprika, onion powder, and thyme. Coat evenly in flour.
  • Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side, or until cooked through.
  • Remove chicken and set aside. Add remaining butter to the skillet. Sauté garlic for 30 seconds.
  • Add chicken broth and cook until reduced by half. Stir in heavy cream and Dijon mustard. Simmer until thickened.
  • Stir in Parmesan cheese and season to taste. Return chicken to the skillet for 2-3 minutes to heat through.
  • Serve with your choice of sides and garnish with parsley and lemon.
