- 4 medium potatoes washed, unpeeled
- 4 tablespoons olive oil
- ¼ teaspoon garlic powder alternatively onion powder and black pepper
- ½ teaspoon dried parsley
- Salt to taste
- 4 tablespoons grated Parmesan cheese divided
Preheat your oven to 450 degrees F and prepare a baking sheet with parchment paper.
Cut the potatoes into ¼-inch slices and toss them with olive oil, garlic powder, parsley, and salt. Sprinkle 2 tablespoons of Parmesan cheese over the potatoes and toss to coat.
Arrange the potato slices in a single layer on the baking sheet. Bake for about 30 minutes, turning the potatoes halfway through, until they are golden and crispy.
After 30 minutes, sprinkle the remaining Parmesan cheese over the potatoes and return them to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
