Ingredients
  

  • 2 pounds carrots peeled and cut into 1/4-inch thick pieces
  • 1 tablespoon honey
  • 1 tablespoon sriracha sauce
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions
 

  • In a mixing bowl, combine the honey, sriracha sauce, salt, pepper, and vegetable oil. Toss the carrot pieces in this mixture until evenly coated.
  • Spread the carrots out in a single layer on a baking sheet. Place in a preheated 400°F oven and roast for approximately 15-20 minutes, turning the carrots halfway through to ensure even cooking.
  • Remember to avoid pouring excess honey and sriracha onto the baking sheet as it may burn. Instead, save it and toss the roasted carrots in it just before serving for added flavor.
