This is one of my husband’s most requested desserts and he loves it served with whipped cream. His mother sent me the recipe that she clipped from a newspaper with the following note. “My mom created this recipe from a dessert my dad served on ferries in British Columbia in the 1930s while saving for University tuition.” Judy Martinez-Ross Moab, Utah
Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 5 tablespoons cocoa, divided
- 2 teaspoons baking powder
- 1 cup granulated sugar, divided
- 1/2 cup milk
- 2 tablespoon butter melted
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 2 cups hot water
Directions:
Preheat oven to 350 degrees.
Mix together flour, salt, 2 tablespoons cocoa, baking powder and 1/2 cup granulated sugar in 2 quart deep baking dish. Combine milk, melted butter and vanilla.
Mix into dry ingredients in baking dish, beating well by hand.
Combine remaining 3 tablespoons cocoa, remaining 1/2 cup granulated sugar and brown sugar; sprinkle over cake batter.
Pour hot water over all and place pan in oven.
Bake 30-40 minutes.
