Preheat your oven to 375°F and prepare a baking sheet with parchment paper.
In a skillet over medium heat, cook the bacon until crispy. Remove and chop. Leave about 2 tablespoons of bacon grease in the pan.
Add diced onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook until fragrant, about 1 minute.
Add ground beef, season with salt and pepper, and cook until browned, about 5-6 minutes. Drain excess fat.
Flatten each biscuit round to about 1/4 inch thickness. On each piece, place beef mixture, chopped pickles, mustard, bacon, and cheese. Pinch edges together to form balls.
Place stuffed dough balls seam-side down on the prepared baking sheet. Brush with melted butter and sprinkle sesame seeds on top.
Bake for about 20 minutes or until golden brown and cooked through.
Serve hot with ketchup for dipping. Enjoy!
