- 2 pounds cod fillets
- 1 large onion
- 2 cups chopped celery
- 5 small carrots
- 1 large bell pepper
- 16 ounces roasted garlic pasta sauce
- 1 tablespoon salt adjust to taste
- 1/2 tablespoon ground black pepper adjust to taste
- 2 tablespoons olive or avocado oil
Chop all the vegetables into small, even pieces.
Heat some olive oil in a large skillet and sauté the chopped vegetables until they begin to soften.
Stir in the roasted garlic pasta sauce with the sautéed vegetables until well combined.
Arrange the cod fillets at the bottom of a baking dish and sprinkle with salt and pepper to taste.
Pour the vegetable sauce mixture evenly over the cod fillets.
Cover the dish with a lid or foil, and bake in a preheated oven at 350°F for about 30 minutes.
Serve the cod warm, or allow it to cool before serving. Enjoy!
