Ingredients
  

  • 2 lb beef
  • 10 medium potatoes
  • 1 large onion
  • 1 large carrot
  • 6 oz tomato paste
  • 4 cups water
  • 1 tablespoon Better Than Bouillon (beef or chicken)
  • 3 bay leaves
  • 1 tablespoon oil
  • 1 tablespoon salt
  • 1 teaspoon pepper

Instructions
 

  • Start by heating the oil in your cast iron oven. Cut the beef into one-inch cubes and brown them on all sides.
  • Chop the onion and carrot, then add them to the beef. Sprinkle with salt and pepper, cooking until the veggies are golden.
  • Mix in the bay leaves and Better Than Bouillon seasoning.
  • In a separate bowl, whisk the tomato paste with warm water until it dissolves, then add it to the beef. Lower the heat to medium and let it simmer for about 45 minutes, or until the meat is nice and tender.
  • Wash the potatoes and chop them into small cubes. Add these to the pot with the other ingredients.
  • Let everything simmer together for another 30 minutes. Check with a fork to make sure the potatoes are cooked through. Enjoy your hearty meal!
