- ½ cup unsalted butter
- 1 ½ cups heavy cream
- 2 tablespoons Cajun spice mix store-bought or homemade
- ½ teaspoon kosher salt skip if your seasoning mix has salt
- 1 ¾ cups freshly shredded parmesan cheese
- 1 lemon only the zest
- 3 tablespoons smoked paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 2 teaspoons kosher salt
- 1 teaspoon white pepper
- 1 teaspoon ground mustard
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon cayenne pepper
- ½ teaspoon dried basil
In a large skillet, melt the butter over low heat until it is fully melted and begins to froth, forming small white bubbles.
Mix in the heavy cream and Cajun spice blend. Add kosher salt if necessary. Let the mixture simmer on low heat for about 5 to 6 minutes.
Take the skillet off the heat and incorporate the lemon zest. Slowly add the parmesan cheese, stirring continuously until it melts completely and the sauce becomes smooth. Adjust salt to taste.
Combine the sauce with pasta and toss to coat, or serve according to your preference.
