Ingredients
  

For the Potatoes:

  • 3 large potatoes peeled and diced
  • olive oil
  • salt to taste
  • black pepper to taste
  • garlic powder to taste
  • paprika to taste

For the Beef Mixture:

  • 1 pound ground beef
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1 teaspoon dried cilantro
  • 1 tablespoon minced garlic
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 cup water

For Assembly:

  • nacho cheese sauce
  • 5 large flour tortillas burrito size
  • taco sauce

Instructions
 

  • Begin by peeling and dicing your potatoes into small cubes. In a bowl, combine them with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.

For Potatoes:

  • Place the potatoes in an air fryer set to 400°F. Cook them for about 25 minutes, shaking the basket a couple of times for even crisping.

For Beef Mixture:

  • While the potatoes are cooking, heat a large skillet over medium-high heat. Add the ground beef, seasoning it with salt, pepper, chili powder, cumin, dried cilantro, paprika, and minced garlic. Brown the beef completely, breaking it apart as it cooks.
  • Once the beef is cooked, drain any excess grease, then add water. Stir and allow it to simmer on low heat while the potatoes finish cooking.

For Assembly:

  • To assemble the burritos, lay out a tortilla and spread a layer of warm nacho cheese on it. Add some of the seasoned beef, drizzle with taco sauce, and include a generous portion of the crispy potatoes. Top with more nacho cheese for extra indulgence.
  • Roll the burrito tightly, ensuring the seam is on the bottom. Cook in a skillet over medium-high heat until each side is golden and crispy, turning for a few minutes.
