Ingredients
  

  • 1 1/2 lbs chicken thighs boneless and skinless, trimmed of excess fat (around 8 pieces)
  • 1 1/4 tsp kosher salt plus freshly ground black pepper to taste
  • 2 garlic cloves minced or pressed
  • 1/2 tbsp chipotle in adobo sauce more if you prefer extra heat
  • 1 tsp ground cumin
  • 1 tsp ancho chili powder
  • 1 tsp oregano dried

Instructions
 

  • Start by seasoning the chicken thighs with salt and pepper on both sides.
  • In a separate bowl, mix together the minced garlic, chipotle in adobo sauce, cumin, chili powder, and oregano. Rub this mixture evenly over the chicken thighs, ensuring they are fully coated. Allow the chicken to marinate for a few minutes to absorb the flavors. You can cook immediately or let the chicken marinate in the fridge for more intense flavor.

For Skillet Method:

  • Heat a large skillet or griddle over medium-high heat, applying a light coat of oil spray. Place the chicken thighs into the heated skillet, cooking for about 6 minutes per side, or until they are browned on the outside and have an internal temperature of 165°F. After cooking, let the chicken rest for a few minutes before slicing and serving in your favorite dish.
  • For Grill or Grill Pan Method:
  • Preheat your grill or grill pan to medium-high, and lightly grease the grates or pan to prevent sticking. Grill the chicken thighs for about 6-8 minutes on each side until fully cooked, reaching an internal temperature of 165°F. Once done, allow the chicken to rest briefly before slicing and serving.

For Air Fryer Method:

  • Set your air fryer to 400°F. Place the seasoned chicken thighs in a single layer inside the air fryer basket, working in batches if necessary. Cook for 14-15 minutes, flipping the chicken halfway through to ensure even cooking. The chicken is ready when it reaches an internal temperature of 165°F. After cooking, let the chicken rest for a few minutes before slicing and serving.
