Preheat oven to 400°F. Line a baking tray with parchment paper.
Wash zucchini and cut into fries (with skin on).
In a bowl, mix Panko bread crumbs, Parmesan cheese, olive oil, pepper, and salt.
In another bowl, beat egg and milk together.
In a third bowl, combine flour and garlic powder.
Dip each zucchini fry into the flour mixture, then the egg mixture, and finally the bread crumb mixture.
Place zucchini sticks on the prepared pan.
Bake for 18 minutes, or until the crust is crispy.
Serve with chipotle mayo or your favorite dipping sauce.
