Crock Pot Creamy Ranch Chicken

- 6 medium Russet potatoes cut into 2-inch chunks
- 4 pieces boneless, skinless chicken breasts
- 2 cups baby carrots
- 1 can (23 oz) cream of chicken soup
- 1/2 cup milk
- 1 oz ranch dressing mix dry packet
- Salt and pepper to taste
- Chopped fresh parsley optional
Spray the inside of your large crock pot with a non-stick coating. Arrange the diced potatoes and carrots at the bottom.
Place the chicken breasts on top of the vegetables and season them with salt and pepper to taste.
In a mixing bowl, whisk together the cream of chicken soup, ranch dressing mix, and milk until well blended.
Pour this mixture over the chicken, spreading it evenly across.
Secure the lid and cook on high for 5-6 hours or low for 8-9 hours. Do not remove the lid during cooking.
When ready, garnish with freshly chopped parsley if you like, and serve warm.
