Garlic & Herb Potato Wedges

Ingredients
  

  • 5 golden yukon potatoes sliced into wedges
  • 2 1/2 tablespoons extra virgin olive oil
  • 3/4 teaspoon garlic seasoning or 3 cloves of fresh garlic, finely grated
  • 1 teaspoon coarse salt adjust to taste
  • 2 teaspoons mixed Italian herbs
  • 1/2 teaspoon ground black pepper

Instructions
 

  • Set the oven to 450 degrees Fahrenheit. Prepare a large baking sheet with aluminum foil, shiny side facing up. Place a cooling rack on top of the foil and set aside.
  • Cut each potato lengthwise, then slice into wedges.
  • In a large mixing bowl, toss the potato wedges with olive oil, garlic seasoning, salt, Italian herbs, and black pepper until all wedges are evenly coated.
  • Spread the seasoned wedges in a single layer on the prepared baking sheet. Bake for 30 minutes. Switch to broil mode and continue baking for an additional 4-5 minutes, or until the wedges are crispy and golden brown. Watch carefully during this stage to prevent burning.
  • Let the wedges cool on the pan for 5 minutes before serving. Enjoy your crispy potato wedges!
