Grilled Cauliflower Steaks

- 1.6 lb cauliflower 2 small heads
- 1/3 cup extra virgin olive oil
- 3 cloves garlic finely chopped
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon smoked paprika
- 1/2 lemon for serving
Remove outer leaves from the cauliflower. Submerge in salted water for 15 minutes, rinse, and pat dry.
Trim the stem to create a flat base. Slice the cauliflower into ¾-inch thick steaks.
Finely chop the garlic and mix with olive oil, sea salt, black pepper, crushed red pepper, and smoked paprika. Brush both sides of the cauliflower steaks with the mixture.
Preheat the oven to 400ºF and line a baking sheet with parchment paper. Roast the cauliflower steaks for 25 minutes, flipping halfway through, until golden and crispy.
Alternatively, grill the cauliflower steaks over medium heat (350-375ºF) for 4-5 minutes per side until golden and crispy.
Serve with a squeeze of fresh lemon juice.
