Grilled Cauliflower Steaks

Ingredients
  

  • 1.6 lb cauliflower 2 small heads
  • 1/3 cup extra virgin olive oil
  • 3 cloves garlic finely chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon smoked paprika
  • 1/2 lemon for serving

Instructions
 

  • Remove outer leaves from the cauliflower. Submerge in salted water for 15 minutes, rinse, and pat dry.
  • Trim the stem to create a flat base. Slice the cauliflower into ¾-inch thick steaks.
  • Finely chop the garlic and mix with olive oil, sea salt, black pepper, crushed red pepper, and smoked paprika. Brush both sides of the cauliflower steaks with the mixture.
  • Preheat the oven to 400ºF and line a baking sheet with parchment paper. Roast the cauliflower steaks for 25 minutes, flipping halfway through, until golden and crispy.
  • Alternatively, grill the cauliflower steaks over medium heat (350-375ºF) for 4-5 minutes per side until golden and crispy.
  • Serve with a squeeze of fresh lemon juice.
