- 2 tablespoons extra virgin olive oil
- 2 teaspoons mixed Italian herbs
- 1 teaspoon onion powder
- 1 teaspoon sea salt
- ½ teaspoon crushed thyme
- Chopped parsley for garnish optional
Preheat your oven to 425°F. Prepare a large baking sheet by lining it with parchment paper and set it aside.
In a medium-sized bowl, combine the sweet potato wedges with the olive oil, ensuring each wedge is well-coated. Arrange the wedges in a single layer on the prepared baking sheet. Set aside.
In a separate small bowl, mix together the Italian herbs, onion powder, sea salt, and crushed thyme. Evenly sprinkle this seasoning blend over the potato wedges.
Bake the wedges in the oven for 25-30 minutes. For extra crispiness, switch the oven to broil on medium and broil the wedges for an additional 4-6 minutes, or until they achieve a light golden-brown color and crisp texture. After removing from the oven, allow the wedges to cool for about 10 minutes on the baking sheet. Optionally, garnish with chopped parsley and serve with your favorite dipping sauce.
