Preheat the oven following the package instructions for the waffle fries.
Spread the fries in a single layer across two baking sheets. Bake until they're golden brown and crispy.
While the fries are baking, season the ribeye steak generously with salt.
Heat a cast-iron skillet over medium heat until hot.
Cook the steak for about 2 to 3 minutes on each side until a crust forms and the steak lifts easily from the pan.
Remove the steak from the skillet and wrap it in foil to rest.
In the same skillet, add the thinly sliced onions and bell peppers. Sauté for 3 to 5 minutes until they begin to caramelize.
Add Worcestershire sauce and ground black pepper. Cover and cook for another 5 minutes until the vegetables are tender.
Slice the rested steak into very thin strips.
Remove the fries from the oven and switch the oven setting to broil.
Layer half of the fries on a baking sheet, sprinkle with ¼ of the shredded cheese, and top with ¼ of the steak strips, peppers, and onions. Broil for about 1 minute until the cheese melts.
Remove from the oven and add the remaining fries on top. Cover with the remaining peppers, onions, steak, and cheese.
Broil again for 2 to 3 minutes until the cheese is fully melted.
Remove the pan from the oven and let it cool slightly. Serve the Philly Cheesesteak Fries directly from the pan, allowing guests to help themselves. Enjoy with mayo, ketchup, or your preferred condiments.
