Preheat your oven to 350°F.
In a small bowl, combine the melted butter with minced garlic and Italian seasoning.
Coat a 9" baking dish with some of the garlic butter mixture.
Cut mozzarella into 16 small cubes (about ½ oz each).
Open the biscuit can and divide each of the 8 biscuits into two equal halves, making a total of 16 pieces.
Place a mozzarella cube in the center of each biscuit half, then wrap the dough around it, pinching the edges together to seal the cheese inside.
Arrange the stuffed biscuits seam-side down in the prepared baking dish, leaving a bit of space between each.
Generously brush the tops of the biscuits with the remaining garlic butter. Sprinkle the grated Pecorino Romano over the biscuits.
Bake in the oven for about 20 minutes, or until the tops are golden and slightly crispy.
Remove from the oven and sprinkle with fresh parsley. Serve and enjoy the cheesy goodness!
