Sliders:
- 1 pound lean ground sirloin
- 3/4 teaspoon ground black pepper
- 3/4 teaspoon sea salt
- 1 teaspoon onion powder
Raspberry Chipotle Sauce:
- 1 fresh jalapeno pepper
- 1 chipotle pepper in adobo sauce
- 1 large clove of garlic minced
- 1 tablespoon apple cider vinegar
- 6 ounces raspberries fresh or thawed
- 4 tablespoons honey
- 1/4 teaspoon sea salt
For serving:
- 4 cooked bacon slices cut in half
- 4 ounces fresh mozzarella cheese
- A handful of arugula
- 8 whole wheat slider buns or dinner rolls
To prepare the Raspberry Chipotle Sauce, combine the jalapeno, chipotle pepper, minced garlic, apple cider vinegar, raspberries, honey, and sea salt in a small saucepan. Bring to a boil, then reduce the heat and let it simmer for 10 to 15 minutes until the raspberries break down and the sauce thickens by about half. Keep the sauce warm but let it cool slightly.
In a bowl, mix together the sirloin, pepper, salt, and onion powder. Form the mixture into 8 slider patties. Grill or cook them in a grill pan at 375°F for 5 to 10 minutes or until they reach your preferred level of doneness.
To assemble, place a cooked slider patty on the bottom half of each bun, top with a slice of mozzarella, a spoonful of the raspberry chipotle sauce, a piece of bacon, and a few leaves of arugula.
Serve immediately.
