For the Dry Mix:
- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1/8 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
For the Wet Mix:
- 5 tablespoons unsalted butter melted
- 1 egg
- 1 teaspoon vanilla extract
- 1/3 cup light brown sugar
- 1/4 cup granulated sugar
For the Candy:
- 1/3 cup crushed Reese’s Pieces
- 1/3 cup whole Reese’s Pieces to top the cookies
For Dry Mix:
In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt with a whisk until everything is blended.
For Wet Mix:
In a large mixing bowl, use a mixer to beat the egg with the brown and granulated sugar on medium speed until creamy, about 2 minutes.
Stir in the melted butter and vanilla extract, mixing until the batter is well combined and smooth.
Gradually add the dry mixture to the wet ingredients, mixing on low speed until a smooth dough forms.
Carefully fold in the crushed Reese’s Pieces, ensuring they’re evenly distributed in the dough.
Wrap the dough in plastic wrap and refrigerate for 2 hours to firm it up.
Baking Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop out approximately 1 ½ tablespoons of the dough for each cookie and place them 2 inches apart on the prepared baking sheet. Top each dough ball with a few whole Reese’s Pieces, gently pressing them into the dough.
Bake the cookies for about 11 to 12 minutes until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a minute, then transfer them to a wire rack to cool completely.
