Ingredients
  

  • 1 large eggplant
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon ground paprika
  • 1/2 teaspoon dried Italian herbs
  • 1 teaspoon kosher salt

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Line a baking tray with parchment paper or lightly grease it.
  • Cut the eggplant into round slices, about 1/4 inch thick.
  • Arrange the eggplant slices in a single layer on the prepared baking sheet.
  • Using a brush, coat both sides of each eggplant slice with olive oil.
  • Generously sprinkle the slices with garlic powder, red pepper flakes, paprika, and Italian seasoning.
  • Place the tray in the oven and roast the eggplant for 20 minutes or until the slices are tender and golden brown.
  • Once done, remove the tray from the oven and lightly season the slices with salt.
  • Serve immediately and enjoy your spicy garlic eggplant slices!
