- 1 teaspoon garlic powder
- 1/2 teaspoon cracked black pepper
- ½ cup Parmesan cheese, grated
- 2 tablespoons olive oil, extra-virgin
- 2 medium zucchini, sliced into ½-inch-thick rounds
- ½ teaspoon sea salt plus more, to taste
Preheat your oven to 450°F, positioning a rack in the middle.
In a large mixing bowl, combine the zucchini slices with olive oil, salt, pepper, and garlic powder. Toss well to coat evenly.
Arrange the seasoned zucchini in a single layer on a baking sheet with a rim.
Sprinkle Parmesan cheese generously over the top of the zucchini.
Place the tray in the preheated oven and roast for 7 minutes.
Switch the oven to broil (high setting) and broil for an additional 2-3 minutes, or until the Parmesan turns golden and the zucchini is tender.
Remove from the oven and serve warm, seasoning with extra salt if desired.
