Chocolate Mint Squares

The perfect holiday combination, chocolate, and mint. These brownies are rich but super delicious. Imagine a moist brownie, covered with a sugary, mint frosting, and topped off with a chocolate glaze. My grandma makes these yummy brownies for many of our family events and they always disappear. I made these for salad bar this month and there was even some leftover for those in second lunch who don’t participate. These are easy to make, but they do involve some time due to the cooling process before assembling all the layers. But in all honesty, they will be worth the extra bit of wait time!

Chocolate Mint Squares

Ingredients:

Cake Layer:

  • 1 cup of sugar
  • 1/2 cup butter
  • 4 eggs beaten
  • 1 cup flour
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 16 oz. can chocolate syrup

Mint Layer:

  • 2 cups 10x sugar
  • 3 tbsp. creme de menthe syrup
  • 1/2 cup butter, softened

Glaze:

  • 6 oz. chocolate chips
  • 6 tbsp. butter

Directions:

Cake Layer: Mix together sugar and butter until fluffy. Add in eggs and mix until incorporated. Add in flour gradually, add in salt, and vanilla. Slowly add in the can of chocolate syrup and mix well. Pour into greased 13×9 pan, bake at 350 degrees for 30 minutes, cool.

Mint Layer: Mix together ingredients, spread over cooled cake.

Glaze: Melt butter and chocolate chips together over low heat. Cool a bit and spread over mint layer. Chill well before cutting.
