Ambrosia Fruit Salad

This traditional Southern salad takes its name from what was called the ‘food of the gods’ in Greek mythology. It is typically served chilled in a crystal or glass bowl and has long been a Southern staple, especially at holidays.

  • 1 large can pineapple chunks, drained
  • 1/4 cup honey
  • 1 tablespoon fresh squeezed lemon juice
  • 3/4 cup sour cream with 2 tablespoons powdered sugar added
  • 3/4 cup whipped cream
  • 1 cup miniature marshmallows
  • 1 cup flaked coconut

Directions:

Add remaining ingredients and stir gently to mix.

Refrigerate overnight.

Gently toss before serving and sprinkle with additional coconut for garnish if you like.
