Avocado Orange Salsa


  • 1 medium ripe avocado, diced (about 1 cup)
  • 2/3 cup mandarin orange segments packed in juice, drained and chopped, 2 (4- ounce) cups
  • 2 tablespoons finely chopped cilantro
  • 1-2 teaspoons finely chopped jalapeño pepper, seeded
  • 1 tablespoon lime juice
  • 1 tablespoon finely chopped red onion
  • Salt as desired
  • Black pepper as desired
  • Vegetables for dipping (jicama, mini bell peppers, radishes, carrots or cucumbers)


Combine salsa ingredients and mix gently until blended.

Serve with vegetables for dipping.
