Baked Cheeseburger and Tomato Pie

Shake up your love for good ol’ cheeseburger and fries with this new twist — in pie form. All of the same goodness, but in one easy serving dish.

Ingredients :

  • 3 medium red potatoes (about 5 cups), shredded
  • 1 pound ground beef
  • 5 ounces spinach
  • 1/2 medium red onion, finely diced
  • 2 eggs, lightly beaten
  • 1 tablespoon tomato paste
  • 1 teaspoon ground mustard
  • 2-3 beefsteak tomatoes, sliced
  • 1/2 pound cheddar cheese, sliced
  • Kosher salt
  • Freshly cracked black pepper
  • Dill pickle chips, for garnish (optional)
  • Ketchup, for garnish (optional)

Directions:

Preheat oven to 375 degrees F.

Grease a standard 9-inch pie dish.

Press potatoes into the pie dish, creating a smooth layer. Cover the potatoes with foil and weight them down with dried beans or pie weights.

Bake the potatoes for 15 minutes, then remove the foil and pie weights and bake for another 5 minutes.

Meanwhile, heat a large, heavy-bottomed pan over medium-high heat. Season ground beef with salt and pepper, then cook the until it is browned, breaking it up with the back of your spoon into small pieces. When beef is almost cooked, add spinach and cook until wilted.

Transfer the beef and spinach to a large bowl. Allow cooling slightly.

Crumble half of the cheese slices into small pieces, then add crumbled cheese slices and onions to beef mixture.

Lightly whisk the tomato paste and ground mustard into the eggs, then toss them in with the beef mixture.

Pour beef and egg mixture into the potato crust. Arrange tomatoes on top of the pie and then top with the remaining cheese slices.

Bake for 30 to 45 minutes, or until the potato is brown and the cheese is bubbly and golden.

Serve warm with dill pickle chips and ketchup, if desired.
