Ingredients:
- 3 cups watermelon seeded and cut into small chunks
- 1/2 Small jicama peeled and cut into small chunks
- 1/2 cup fresh mint (or parsley) chopped (or 1 teaspoon dried)
- 1/2 cup white onion chopped
- 1 jalapeño pepper seeded and finely chopped
- 1/4 cup raw peanuts finely chopped
- 2 tablespoons fresh lime juice
- 2 lb skinless and boneless chicken breast fillets
- 2 teaspoons salt-free seasoning (or 1/2 teaspoon salt, optional)
Directions:
Preheat oven to 350° F.
Combine all ingredients except the chicken, and set aside for about 30 minutes before serving.
Meanwhile, place chicken breast in a medium size baking pan; sprinkle seasoning and bake for 30-40 minutes, or until chicken reaches an internal temperature of 165° F.
Serve watermelon salsa over baked chicken.
