Beef Chili with Hominy

Fully cooked, canned hominy is a tremendous time saver for the weeknight cook. Its distinctive taste is particularly good in chili.

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • One 1-ounce package chili seasoning mix
  • One 15-ounce can hominy, drained
  • One 14.5-ounce can fire-roasted tomatoes, including liquid
  • 1/3 cup chopped cilantro

Directions:

Heat oil in a 12-inch deep skillet over medium-high heat until hot. Add onion and pepper and cook, stirring, for 2 minutes. Add beef and cook until no longer pink. Stir in chili seasoning and cook, stirring, for 1 minute. Add hominy and tomatoes. Bring to boil and simmer, covered, for 10 minutes. Stir in cilantro.
