Two weekends ago I was in the mood for muffins. We have a recipe for the “Best Ever Banana Muffins” and that is the cold, hard truth. These are indeed the best banana muffins you will ever eat. I have used this recipe for the past 6 years and I don’t plan on switching to a new recipe anytime soon.
I normally make these muffins according to the recipe but today I was in the mood for some coconut. I tossed in 1 cup of flaked coconut to the batter and then spooned that into the muffin cups. Then I sprinkled a little more coconut on top and popped them in the oven! These are also amazing with chocolate chips mixed in. Better yet, coconut AND chocolate chips. Now we’re talking…
Ingredients:
- 3 large bananas, peeled
- 3/4 c. white granulated sugar
- 1 1/2 c. all-purpose flour
- 1 large egg
- 1/3 c. unsalted butter, melted
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
Directions:
Preheat oven to 375 degrees. Fill muffin cups with baking liners.
Mash bananas in a large mixing bowl. Then, add sugar, one egg, and melted butter and stir until mixed. Add dry ingredients and stir until well combined; batter will be lumpy.
Pour batter into muffin cups and bake for 18-20 minutes.
Notes: These muffins are also great with coconut, chocolate chips, and/or walnuts. Simply, add 1 cup of your favorite mix-in to the batter.
