Chicken, Pineapple and Pepper Kabobs


  • 1/2 cup Great Value Peach Pineapple Chipotle Salsa plus additional for serving
  • 1 cup Great Value pineapple chunks in juice (reserve juice)
  • 1 lb boneless skinless chicken breasts cut into 1-inch pieces
  • 1 green bell pepper cut into 1-inch pieces
  • 8 (10 inches) bamboo skewers


Combine salsa and 1/4 cup reserved pineapple juice.

Place chicken in nonmetal dish or re-sealable plastic food storage bag and add salsa mixture. Refrigerate 20-30 minutes.

Meanwhile, soak 8 (10-inch) bamboo skewers in water. Preheat gas grill or prepare charcoal grill.

Remove chicken from marinade; discard marinade. Alternately thread chicken, pepper and pineapple on soaked bamboo skewers. Grill kabobs until chicken registers 165° F on a meat thermometer, turning occasionally, about 15 minutes. Serve kabobs with additional salsa.
