This simply delicious frittata lightens up the fat and calorie count with egg whites, chicken sausage, and feta cheese. Serve this with a nice green salad for an easy weeknight dinner.
Ingredients:
- 5 large eggs
- 6 large egg whites
- 1 tablespoon olive oil
- 2 links (about 6 ounces) fully cooked chicken sausage, sliced into 1/4-inch thick slices
- 4 green onions, sliced
- 1/2 cup crumbled feta cheese
- Kosher salt and freshly ground black pepper
Directions :
Heat oven to 350 degrees F.
Whisk the eggs and egg whites until smooth in a large bowl and season with salt and pepper.
Add olive oil to a 10-inch nonstick sauté pan over medium heat. Add sausage and sauté until lightly browned about 2 minutes. Stir in the green onions and sauté until fragrant, about 1 minute.
Add the eggs to the pan and stir until they thicken up at the bottom, about 2 minutes. Sprinkle the top with the feta cheese. Place in the oven and continue baking until the eggs are set, about 15 minutes more.
Serve sliced into wedges.
