4 Delightful Christmas Cookies

Gingersnaps Cookie

These sweet and chewy cookies remind me of Christmas. I believe it’s the combination of ginger and cinnamon flavors that makes this a holiday cookie. This recipe makes about 30 cookies.

Ingredients:

  • 1.25 cup all purpose flour
  • 1/2 cup sugar
  • 2 tablespoons molasses
  • 1/2 cup butter (1 stick) at room temperature
  • 1 egg yolk
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • sugar to coat

Directions:

Preheat oven to 375F. Mix ginger, cinnamon, backing soda and flour together well. In a separate bowl, cream butter with sugar. Add egg yolk and beat until smooth. Add flour mixture to the bowl and beat until well mixed. Place small mounds (about 1 tbsp) of batter on your backing dish. Sprinkle sugar over cookies. Bake in the oven for 10-12 minutes or until golden. Cool on racks before serving.

In US and Canada, sugar cookies are quite popular in holidays such as Christmas and Halloween. We usually decorate them with colored sugar or royal icing. This recipe is a simple and traditional recipe and makes 48 cookies:

Ingredients:

  • 2.5 cups all purpose flour
  • 1.5 cups sugar
  • 1 cup butter (2 sticks) at room temperature
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Directions:

Preheat oven to 375F. Mix salt, backing soda, flour and cream of tartar together well. In a separate bowl, cream butter with sugar. Add egg and vanilla extract and beat until smooth. Add flour mixture to the bowl and beat until well mixed. Place small mounds (about 1 tbsp) of batter on your backing dish and lightly press them. Bake in the oven for 10 minutes until lightly browned. Cool on racks before serving.

Oatmeal Raisin Cookie

This is one my most favorite cookies. The combination of oatmeal and raisin makes this an amazing and delicious treat. This recipe makes about 40 cookies.

Ingredients:

  • 1 cup all purpose flour
  • 1.5 cup brown sugar
  • 3/4 cup butter (1.5 stick) at room temperature
  • 2 cups rolled oats
  • 0.25 cup wheat germ
  • 3/4 cup raisin
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt

Directions:

Preheat oven to 375F. Mix salt, backing soda, rolled oats, wheat germ and flour together well. In a separate bowl, cream butter with sugar. Add egg and vanilla extract and beat until smooth. Add flour mixture to the bowl and beat until well mixed. Stir in raisins Place small mounds (about 1 tbsp) of batter on your backing dish. Bake in the oven for 10-12 minutes or until golden. Cool on racks before serving.

Chocolate Chip Cookies

  • 1 cup all purpose flour
  • 2/3 cup brown sugar
  • 1/2 cup butter (1 stick) at room temperature
  • 3/4 cup semisweet chocolate chips
  • 1/3 cup chopped nuts
  • 1 egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Directions:

Preheat oven to 375F. Mix salt, backing soda and flour together well. In a separate bowl, cream butter with sugar. Add egg and vanilla extract and beat until smooth. Add flour mixture to the bowl and beat until well mixed. Stir in chocolate chips and chopped nuts. Place small mounds (about 1 tbsp) of batter on your backing dish and lightly press them. Bake in the oven for 10 minutes until lightly browned. Cool on racks before serving.
