Cranberry Pecan Granola

Ingredients:

  • 4 cups rolled oats (aka old fashioned oats)
  • 1 cup unsalted pecans
  • 1/2 cup maple syrup
  • 1/2 cup canola oil
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup dried cranberries

Directions:

Preheat the oven to 250 degrees F. Line a baking sheet with parchment paper. Set it aside.

In a large bowl, mix together the oats and pecans. Set it aside.

Put the maple syrup, oil, and brown sugar in a small saucepan. Bring it to a boil over medium heat.

Remove the saucepan from the heat and add in the vanilla extract. Stir.

Pour the hot mixture over the oats and pecans and stir everything together with a spatula.

Spread the granola onto the baking sheet lined with parchment paper.

Bake the granola at 250 degrees F for 1 hour and 15 minutes. Occasionally stir the granola with a metal spatula throughout the baking time.

Once the granola is done baking, put it into a large bowl.

Add the dried cranberries and stir them in.

Let the granola cool completely.

Then put the granola into an airtight container. Enjoy 🙂
