Creamy Chipotle Sweet Potatoes

Pure comfort food at its best — the creamy texture of this dish perfectly balances its sweet and spicy flavor.


  • 2 pounds sweet potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1 minced chipotle chili in 1 teaspoon adobo sauce, or to taste
  • 1/2 cup sour cream
  • 2 tablespoons lime juice, or to taste


Combine potatoes with water to just cover in a saucepan. Bring to a boil, covered. Simmer, covered, 15 minutes, or until tender. Drain. Mash potatoes with a potato masher.

Stir in chipotle chili and sauce, sour cream, lime juice and salt to taste.
