Easy Chicken Parmesan Sandwich

By sprinkling seasoned breadcrumbs on top of the cheese before putting all under the broiler, you achieve a crunchy, cheesy chicken parm sandwich done right, without all the work.

Ingredients:

  • 1 tablespoon plus 1 teaspoon olive oil, divided
  • 1/3 cup Italian panko breadcrumbs
  • 1 clove garlic, minced
  • 1/2 pound boneless and skinless chicken cutlets
  • Salt and freshly ground pepper
  • 1 cup marinara sauce (your favorite)
  • 2 tablespoons freshly grated Parmesan cheese
  • 3 ounces thinly sliced mozzarella
  • 1 focaccia or ciabatta roll, lightly toasted

Directions:

Preheat the broiler. In a small bowl, stir 1 teaspoon olive oil into the panko, set aside.

In a large oven-safe skillet over medium-high heat, heat 1 tablespoon olive oil. Saute the garlic for 15 seconds. Season the chicken with salt and pepper and saute until cooked through about 6 minutes total.

Pour the sauce on top of the chicken in the pan and cook until heated through about 1 minute. Sprinkle the Parmesan on top of the chicken, then layer the mozzarella and sprinkle the panko breadcrumbs on top of the mozzarella.

Put in the broiler for 3 to 5 minutes, until the panko is browned and the cheese is melted. Using two spatulas, scoop the chicken and toppings up and slide onto the bread, spooning extra sauce over the top. Trim the sides of the bread, if needed. Serve immediately.
