Do you like pancakes? I just LOVE them! And not only me…..my kids ask me almost every day to make them pancakes. Well, at least something they like eat…and there are only a few dishes they like. But, lets get to the happy part! Pancakes!
I like them fluffy! And homemade 🙂 These pancakes are just right and they are impossible to resist.
I would like to share this simple recipe of the fluffy pancakes with you . So you can enjoy them just as I do.
This recipe makes about 15 medium size pancakes. So if you need more, let’s say 30, just double the ingredients.
Fluffy Pancakes
Ingredients
- 1 cup kefir 250 ml.
- 1/6 cup water 40 ml.
- 1 eEgg
- 1 1/3 cups flour 300 – 350 ml – about 230gr.
- 3 tbsp. sugar
- 1/2 tsp salt do not overfill
- 1/2 tsp soda do not overfill
- Vegetable oil for frying.

Instructions
- Mix kefir with water and warm it up slightly in a microwave.
- In a main bowl, which you will use to prepare the mixture, put salt, sugar, egg and pour the lightly warmed kefir. Stir until you see a bubbly foam on top.
- Add flour, dividing it into 2 or 3 smaller portions, in order to make it easier to mix. Stir well to avoid lumps.
- Mixing is a very important part of making the pancakes, surprisingly. Most of what makes the pancakes delicious comes from mixing them. When mixing air bubbles should be introduced all throughout the mixture as one whips it all together, that will make the pancakes fluffy.
- IMPORTANT: You should get a thick and viscous mass that is not dripping from a spoon. If the mixtures isn’t thick enough, add more flour and mix again. I use egg whisker for mixing the pancake mass, it quickly mixes and breaks up the lumps.
- Once the pancakes mix is ready, add baking soda and stir again.
- Heat a large skillet over medium heat, and pour some vegetable oil on it. Pour pancakes into the skillet and cook until you start seeing little wholes in them. Flip with a spatula, and cook until browned on the other side. The other side should cook much faster than the front side, so be careful and do not burn them.
- We like to eat them with either sour cream or maple syrup and finish it up with the glass of milk.
- But this is totally up to you. Chose whatever you usually like to eat your pancakes with. You might add some whip cream and fruits or berries on top. The possibilities are endless.
