Gnocchi and Beef Casserole with Creamy Pumpkin Sauce

The flavors and colors of the fall harvest make this a dish you’ll enjoy serving to guests, and it comes together in just 30 minutes. Pre-made gnocchi is covered in a healthy, creamy pumpkin sauce, then tossed with ground beef and spinach before hitting the oven. The tender pillows of pasta and meat are an irresistible combination!

Ingredients:

  • 1/3 cup plain Greek yogurt
  • 1 cup pumpkin puree
  • 1 cup vegetable broth
  • 1 teaspoon salt, divided
  • 1/2 pound 90% lean ground beef
  • 2 cloves garlic, minced
  • 3 cups pre-made gnocchi (about 18 ounces), refrigerated or frozen
  • 1/2 teaspoon pepper
  • 2 cups packed spinach, coarsely chopped
  • 8 sage leaves, coarsely chopped
  • 1 cup fresh Parmesan

Directions:

Preheat oven to 375 degrees F.

In a small saucepan over low heat, whisk together Greek yogurt, pumpkin, broth and 1/2 teaspoon salt.

In a medium nonstick skillet, cook beef, garlic and remaining salt over medium-high heat until meat is no longer pink. Drain fat from beef and return to skillet, then stir in gnocchi, spinach and sage.

Spray a medium-sized baking dish with nonstick spray, then add gnocchi and beef mixture. Pour sauce evenly over the mixture, then top with Parmesan.

Bake for 12-14 minutes, until cheese, is melted and bubbly.

Tip: Make the sauce a day ahead for even easier prep.
