Extra sharp cheddar cheese and green onions add moisture and flavor and make these turkey burgers extra juicy and delicious. Top with an easy pickled red onion for a tangy kick that makes an everyday meal something a little more special.
Ingredients:
- 1 1/4 cup red wine vinegar
- 1/4 cup sugar
- 1 1/2 teaspoons kosher salt
- 1 red onion, sliced 1/4 inch thick into half-moons
- 1 1/4 pounds lean ground turkey
- 3 thinly sliced green onions
- 1 cup finely grated extra sharp cheddar cheese
- 1 tablespoon olive oil
- Kosher salt and freshly ground black pepper
- 4 hamburger buns, toasted
- Sliced tomatoes, lettuce, ketchup, mustard, for topping
Directions:
To make the pickled red onions:
Add the vinegar to a small saucepan and bring to a boil. Stir in the sugar and salt until it dissolves. Add the onions to the vinegar, making sure they are fully submerged in the vinegar. Reduce heat to a simmer, and cook the onions for 5 minutes, until they are softened and bright pink. Turn off heat and cool completely.
Heat gas or charcoal grill to medium-high heat.
In a medium bowl, combine the turkey, green onion, and grated cheese. Season the mixture with salt and pepper. Form into 4 3/4-inch thick patties. Lightly brush the outsides of the burgers with olive oil and season both sides of the patties.
Grill the burger patties for 6 minutes per side, until thoroughly cooked through, or until a thermometer inserted into the center of the burger reaches 165 degrees.
Place the patties between the toasted buns and dress with pickled red onions, lettuce, tomato, ketchup, and mustard.
Tip: Chop up the leftover pickled onions to use as a topping on chili, soups or tacos
