Slow Cooker Moroccan Chicken Thighs

Welcome the deep, aromatic flavors of Morocco with these spiced chicken thighs that become amazingly tender in the slow cooker. Combined with onion, sweet potatoes, and golden raisins, this is an easy meal to wow guests with. The vibrant colors will brighten up any plate.

Ingredients:

  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon cinnamon
  • 3/4 teaspoon ginger
  • 2 teaspoons salt
  • 3/4 teaspoon black pepper
  • 4 cloves of garlic, minced
  • 1 1/2 tablespoons olive oil
  • 8 skinless chicken thighs, bone-in
  • 1 red onion, thinly sliced
  • 2 sweet potatoes, peeled and cubed
  • 3/4 cup chicken broth
  • 1 cup golden raisins
  • Cooked rice and sliced almonds for serving

Directions:

Combine the first 8 ingredients together in a bowl. Rub the mixture thoroughly into each of the chicken thighs.

Scatter the onions over the bottom of the slow cooker, then place the chicken thighs evenly over them. Distribute diced sweet potatoes and golden raisins over the chicken. Pour chicken broth around the edges of the slow cooker.

Cover and cook on low for 4 hours, until the chicken is tender and cooked through and the raisins are plump. Serve over rice with sliced almonds.
