Southern Fried Chicken Recipe with Fresh Lemon Dipping Sauce

If you love fried chicken, are a fan of Buffalo wings and you’re looking for “something different” to try, this recipe is for you!

This recipe is wonderful for football game day get-togethers, picnics, tailgating or as an appetizer. It also is great as a part of a larger meal.

Southern Fried Chicken Wings Recipe

Serves 4 – 5

Ingredients

  • 3 pounds chicken wings, tips removed and jointed (approximately 20 pieces)
  • 2 tablespoons soy sauce
  • ½ teaspoon salt
  • 2 large eggs
  • ¼ cup cornstarch
  • ½ teaspoon baking powder
  • A generous pinch of coarsely ground black pepper
  • 1 cup oil for frying

Instructions

Note: I like to use a wok for this recipe. It’s not necessary, but it greatly reduces the amount of oil required.

If wings have not been jointed, do so now and discard the tips.
In a medium sized bowl, whisk together the salt and soy sauce. Place jointed chicken wings in the soy sauce mixture, turning to coat them well, and marinate for about 20 minutes.
Make the batter in a small bowl, by whisking together the eggs, cornstarch and salt.
Heat the oil in a wok to about 350° F.
Working in batches, coat 4 or 5 wing pieces in the batter and fry in the hot oil for a total of about 4 to 6 minutes, turning if necessary. The wings should be beautifully brown, but not necessarily cooked all the way through.
Place fried chicken wings on paper toweling as you finish frying each small batch.
Preheat oven to 350° F.
Clean the wok and prepare the Lemon Sauce recipe (below).
Place the fried chicken wings in a baking dish and drizzle several large spoons of the lemon sauce over the wings.
Bake wings for 30 – 40 minutes and serve hot with extra lemon sauce on the side.

Lemon Dipping Sauce Recipe

Ingredients

  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1 cup chicken broth
  • ¾ teaspoons salt
  • 1 drop yellow food coloring
  • 3 lemon slices – ¼ inch thick and zest removed

Instructions

In a medium bowl, combine the sugar, cornstarch, lemon juice, chicken broth, salt and food coloring. Whisk these together until thoroughly combined and sugar is completely dissolved.
Warm 2 tablespoons of oil in the wok and carefully stir in the lemon sauce mixture.
Add the lemon slices and cook the sauce, stirring constantly, until it becomes translucent.
Serving Suggestions

To take a southern fried classic and transform it into an oriental sensation, along with the chicken wings, serve the reserved lemon sauce over coconut hiziki rice with edamame on the side!
