Vegetable Hash

Ingredients:

  • 2 tablespoons canola oil
  • 1/2 cup chopped onion
  • 2 cloves minced garlic
  • 3 cups Great Value frozen southern-style shredded hash brown potatoes
  • 1/2 cup Great Value fat-free low sodium chicken broth
  • 3 cups Great Value frozen mixed vegetables
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt

Directions:

Heat two tablespoons of canola oil in a large skillet over medium heat. Add minced onion and garlic, and stir for one minute. Be careful not to burn garlic.

Add hash browns and all seasonings. Cook until hash browns are tender.

Add chicken broth and deglaze the pan, loosening all stickiness from the bottom of the pan. Immediately add Great For You Frozen Mixed Vegetables.

Lower heat to simmer, and simmer until vegetables are heated all the way through.
