Comfort foods are a Southern tradition. If the day is long and hard, then a nice hot homemade meal seems to make it all better or, at least, takes the edge off.
Some comfort meals are quite time consuming. Others like this recipe for Homemade Meatballs with Canned Soup Gravy are pretty quick and easy.
Various seasoning can be used in the meatball mixture, but this basic recipe appeals to most Southern families. The meatballs have a little kick but not a whole lot. It’s better not to go overboard on the meatball seasonings when making the rich cream soup based gravy.
Homemade Meatballs Recipe
Ingredients:
- 1.5 pounds of ground beef (or minced meat)
- 1 cup bread broken in small pieces
- ¼ teaspoon pepper
- 1/4 teaspoon sage
- ½ teaspoon parsley flakes
- ¼ cup milk
Directions:
Crumble ground beef in a large mixing bowl.
Add in bread crumbs.
Sprinkle in seasonings.
Pour in milk.
Mix together all ingredients. This works best by using your hands.
Roll hamburger mixture into balls about the size of quarters. You should have 25-to 30 meatballs when you’re done.
Cover the bottom of a frying skillet with enough oil to barely cover.
Brown meatballs in vegetable oil on medium heat.
Remove meatballs (and save to put back in gravy – recipe below)
Drain off fat and mix up meatball gravy.
Easy Soup Based Meatball Gravy
Ingredients:
- 1 can of condensed cream of mushroom soup or other favorite cream soup (10.5 ounce size can)
- 2/3 cups water
Directions:
Put soup and water in skillet with the oil drained off prior.
Stir well
Add meatballs to soup mixture.
Simmer on low for around 20 minutes or until smooth and hot.
Meatballs with soup gravy are delicious served over egg noodles or other favorite pastas.
