Amazing Red Velvet Cupcakes & Cream Cheese Frosting

Amazing look of a perfectly baked red velvet cupcake dressed in wonderful colorish cream cheese frosting. It’s a tasty dessert fabricated especially for Christmas or a Valentines day.

Red velvet had to take a part here for it’s great popularity. Sometimes you have to break the line of all those chocolaty, peanut butter filled desserts with something red and lovely. So, the first step was to buy a red food coloring. All other ingredients were at hand. With a little effort and some enthusiasm the cupcakes found their way to the plate on the holiday decorated table.

Ingredients:

Red Velvet Cake

  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons cocoa powder
  • 2 oz. red food coloring
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda

Cream Cheese Frosting

  • 1/2 cup cream cheese
  • 1/2 cup softened butter
  • 1 1/2 cup powdered sugar
  • 2 tablespoons of red food color

Directions:

Preheat the oven to 350 F degrees. Prepare the regular size muffin tin. Mix the flour with baking powder and salt. Beat the butter with sugar until fluffy, add eggs, vanilla extract, red food coloring, cocoa, the flour mix and stir until smooth without lumps. Add buttermilk, white vinegar and baking soda to complete the cupcake batter. Pour the batter into each compartment of the muffin tin and bake for about 20 minutes. While the cupcakes cool mix the ingredients for the cream cheese frosting.

Cream Cheese Frosting

Mix the butter with sugar and when it becomes fluffy and creamy add the cream cheese and the red food coloring in just a half of the mix. So, now you have two colors of the frosting. Put the white frosting in one side of the decoration bag and the red one in another side. With the first pressing of the decoration bag the frosting won’t be as you would like it to be…but every other will be awesome.
