Ingredients:
- 1 medium ripe avocado, diced (about 1 cup)
- 2/3 cup mandarin orange segments packed in juice, drained and chopped, 2 (4- ounce) cups
- 2 tablespoons finely chopped cilantro
- 1-2 teaspoons finely chopped jalapeño pepper, seeded
- 1 tablespoon lime juice
- 1 tablespoon finely chopped red onion
- Salt as desired
- Black pepper as desired
- Vegetables for dipping (jicama, mini bell peppers, radishes, carrots or cucumbers)
Directions:
Combine salsa ingredients and mix gently until blended.
Serve with vegetables for dipping.
