Spicy Buffalo Chicken Pizza

This spicy buffalo chicken pizza is ridiculously easy to make and oh, so yummy. Frank’s Red Hot Buffalo Wing Sauce is an amazing compliment to the spicy barbeque flavor, but if you have a favorite hot sauce, such as Tabasco or another brand, you can easily substitute that. Try marinating the cubed cooked chicken in the hot sauce for an hour or two before you assemble the pizza to allow for an extra zing. Or better yet, marinate the chicken before you cook it in the hot sauce, then again in the fresh hot sauce after it is cooked for a double threat. You can easily break this pizza out into smaller portions and fit onto a self serve small pizza crust if you happen to be dining alone or want your guests to enjoy their own personal pizza.

Spicy Buffalo Chicken Pizza

Ingredients:

  • 1 large pre-made pizza crust shell
  • ¾ cup spicy barbeque sauce
  • 1 fresh jalapeno sliced in thin rings with the seeds intact
  • 3 cups cooked chicken breast diced into about one-inch cubes
  • ¾ cup Frank’s Red Hot Buffalo Wings Sauce
  • 1 ½ cups shredded low-fat mozzarella cheese
  • 1 cup gorgonzola or blue cheese crumbles

Direction : 

Preheat your oven to 450 degrees and place a pizza baking stone in the center rack.
Spread the pre-made pizza crust with the spicy barbeque sauce all the way around, except for about a ½ inch around the edges for the crust. Top the barbeque sauce with the jalapeno rings.
In a small bowl, toss the cooked chicken with the Wing sauce and coat evenly. Place the wing sauce-covered chicken over the barbeque sauce evenly. Top with the cheeses, again avoiding the outer ½ inch crust at the edges.
Carefully place the pizza onto the pizza stone and bake for about fifteen minutes or until the cheese melts completely ad serve piping hot.
You can feel free to experiment with the heat of this pizza by adding some red pepper flakes to the layers of cheese before baking or even blending in another chopped jalapeno into the barbeque sauce before spreading. Alternatively, you can tone down the heat by choosing a sweeter barbeque sauce and omitting the sliced jalapeno rings altogether. Also, try tossing on some diced celery stalks to round the complete wing experience.

A nice spicy Shiraz is a great compliment to this spicy buffalo chicken pizza, as is a nice sweet Riesling or super sweet Moscato as juxtaposition. Enjoy!
