Strawberry Cheesecake Poke Cake

Fresh strawberry cheesecake with an appetizing creamy and cheesy topping gives a sense of a spring in your home.

When I saw all those fresh and colorful strawberries yesterday, I couldn’t resist to buy them. They looked so healthy and sweet. There was a saying as long as I can remember, first strawberries are just for looks, with fresh leaves and perfect bright red color. I have to oppose on that, ’cause the strawberries I have bought were just as perfect from the inside like from the outside. Sweet, beautiful and tasteful, everything I needed to make this awesome cheesecake.

This was my contribution to introduce the spring and to indulge our cravings for fresh and sweet strawberries.

Ingredients:

  • 1 box Strawberry cake mix (adding the ingredients listed on the box)
  • 1 1/2 cup strawberries (cut in small pieces)
  • 3 tablespoons sugar
  • 1/2 cup water
  • 1 tablespoon corn starch
  • 3 1/2 ounces cream cheese
  • 3 tablespoons powdered sugar
  • 1 cup whipping base

Directions:

Bake the strawberry cake and poke it with a wooden spoon.

Put the strawberry pieces in the pan and add the sugar.

Cook on medium heat for a few minutes until the sugar is melted.

Add the water mixed with corn starch and stir until the strawberry jello thickens.

Cool the jello on a room temperature and pour it on the top of the cake.

That jello will fill in every little hole on the cake.

While it cools, mix the cream cheese with powdered sugar and add the beaten whipping base.

Now you have a nice cheesy topping for your cake.

Spread it all over the strawberry cake and garnish with fresh strawberries.
