Amazing Old Fashioned Goulash

For me, old fashioned goulash is one of those meals that makes me want to curl up on the couch wrapped in a blanket.

Cozy.

Warm.

Comforting.

I definitely needed it today.

All day I couldn’t decide what I should make for dinner.

Between a toddler that throws epic tantrums and a preschooler who misses the potty often, I just didn’t have it in me to make anything fancy today.

I was seriously tempted to just order a pizza. Then I thought of this meal and realized it was perfect. It’s fast, easy, and delicious.

Ingredients:

  • 1 lb hamburger
  • 1 large red or green bell pepper, chopped
  • 1 small yellow onion, chopped
  • 1 can diced tomatoes
  • 2 cans tomato sauce
  • 4 cups water
  • 2 cups beef broth
  • 1 16oz package elbow noodles
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp Oregano
  • 1 1/2 Tbsp Basil
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • salt
  • pepper
  • Colby Jack cheese, shredded

Directions:

In large pot, combine seasonings, water, broth, tomatoes, tomato sauce, and Worcestershire sauce.

Bring to a small boil on medium heat.

Meanwhile, cook hamburger, onion, and bell pepper in a skillet on medium heat.

Cook until hamburger is browned and onion and pepper are soft. Add to pot.

Add elbow noodles to mixture in pot. Mix well.

Let boil on medium until noodles are tender.

Salt and pepper to taste.

Top with cheese
