Chicken Nuggets: Baked, Not Fried

Since these chicken nuggets are baked, not fried, they are a healthier version than the original recipe. With prep and cooking time at less than 45 minutes it’s the perfect midweek recipe. Make a double batch and add to salads for a healthy lunch option!

Ingredients:

  • 4 skinless chicken breasts
  • 1/2 cup olive oil
  • 4 crushed garlic cloves
  • 1/4 cup Italian bread crumbs
  • 1/4 cup parmesan cheese
  • Non-stick cooking spray

Directions:

Preheat your oven to 400 degrees. Turn stovetop up to medium heat and drizzle olive oil in a frypan. Add crushed garlic gloves and heat until fragrant (about 4/5 minutes). Pour in a heat-safe bowl and allow it to cool.

Cut chicken breasts into nugget-sized pieces.

Combine bread crumbs and parmesan cheese in a mixing bowl. Dip the cut chicken in the garlic-infused oil and then coat with crumb mixture. Place chicken in a treated, oven-safe baking dish. Bake at 400 degrees for 35 min. Serve with your favorite dipping sauce.
